Description
This research project aims to assess microbial risk management and monitoring practices in Palestinian dairy factories. The study will investigate how microbial risks are identified, monitored, and controlled during raw milk reception, pasteurization, processing, packaging, and storage. The research will combine field observations, interviews with quality control personnel, review of available quality control records, and selected laboratory analyses where permitted. Particular attention will be given to Good Manufacturing Practices (GMP), hygiene and sanitation procedures, and the application of Hazard Analysis and Critical Control Points (HACCP) principles. The project will also examine challenges faced by dairy factories in implementing microbial monitoring systems and maintaining product quality and safety. Based on the findings, the research team will develop practical recommendations and a proposed microbial monitoring improvement plan suitable for Palestinian dairy production facilities. The study will be conducted under the supervision of Prof. Hazem Sawalha, with the participation of two undergraduate Biology and Biotechnology students from Arab American University: Karim Jarrar and Muayad Yaseen.
