Description
Olive Zibar is a plentiful common local waste in Palestine often discarded recklessly, harming agricultural lands due to its high acidity and it containing high concentrations of polyphenols. It is a zero value commodity with high medicinal values, including antioxidants and anti inflammatory ingredients (such as hydroxytyrosol, ellagic acid and oleuropeins). the project would include: • Extract polyphenolic compounds from Zibar using environmentally friendly extraction methods. • Characterize the extract through total phenolic content determination and antioxidant activity assays. • Develop and optimize an anhydrous topical balm containing the extracted polyphenols. • Evaluate the physicochemical properties, homogeneity, and stability of the formulated product. • Investigate the antimicrobial activity of the extract and, where feasible, the final formulation. • Develop a prototype with potential for future commercialization.
